CULINARY SPECIALTIES OF THE EMILIA-ROMAGNA

Besides its fascinating landscapes, the Emilia-Romagna has numerous culinary treasures to offer! It is home to many fine delicacies, such as the Parmesan cheese, the popular balsamic vinegar, or the famous Bolognese sauce.

Savoury Parma ham & Parmesan cheese

The region surrounding the provincial capital Parma invites its guests to feast and savor its delicacies. The Prosciutto di Parma, the well-known Parma ham, is made of pork legs which weigh up to 15 kilos. Its special flavour originates from the special climate in the region, which the Romans already found out in the 1st century BC!

The legs need a defined temperature control for more than 12 months and are salted by hand to get their unique and delicious flavour. The ham can be savoured with plain bread or grissini, which emphasize the aroma. As “Antipasto” it often comes with melons, grapes or figs. But it also tastes excellent with rocket salad on a crisp pizza!

Besides the delicious ham, the Parmesan cheese has its roots in Parma, which is a worldwide popular delicacy. Its history began 900 years ago, when the long-lasting cheese was the perfect provision for the pilgrims on their long travels.

Aromatic balsamic vinegar & excellent wines

The provincial capital Modena is home to the fine Aceto Balsamico Tradizionale di Modena. The word Tradizionale makes the difference: the traditional balsamic vinegar has a protected designation of origin (D.O.P) since the year 2000 and costs up to 30 Euros for 100 ml!
 
The famous Italian Lambrusco wine is also produced in Modena. It is a lightly sparkling red wine, with a taste of red fruits. The Romagna Albana is the first Italian DOCG white wine since 1987.

 

Bologna – home to the Bolognese sauce

The regional capital Bologna is also named “La Grassa”, what means the fat one. Its “pasta al ragù” is famous worldwide as Spaghetti Bolognese. But in its home town it is never served with Spaghetti, but rather with Egg Tagliatelle.
 
The popular Tortellini pasta is from Bologna, too. Its shape is said to be a recreation of the belly button of the love goddess Venus. The filling mostly consists of pork meat, Parma ham, Parmesan cheese and Mortadella sausage, which also has its home in Bologna.
